GustoItalianoTuna with White Beans
Tuna is lightly grilled to your desired doneness, then served on a bed of tender white beans seasoned with tomatoes, arugula, pancetta and onions. Serves 4.
4 Tablespoons Olive Oil
4 (6 oz) Tuna Steaks (Preferably At Least 2 Inches Thick)
3 Cups of White Beans
5 Slices Bacon or Equal Amount of Pancetta
1/4 Cup Minced Onions
2 Large Garlic Cloves, Minced
6 Fresh, Ripe Roma Tomatoes, Diced
2 Cups Fresh Arugula
Salt & Pepper
Dressing:
1/4 Cup Balsamic Vinegar
3/4 Cup Olive Oil
Salt & Pepper
1/2 Cup Fresh Chopped Chives
In a sauté pan, cook the bacon or pancetta until fully cooked. Add the onions and cook until translucent. Add the garlic and cook just until sizzling. Add the beans, tomatoes, arrugula and heat thoroughly. Season with salt and pepper.
To make the dressing, place all the dressing ingredients in a blender and pulse briefly. Oil the tuna lightly on both sides, and season with salt and pepper. Grill on a hot grill and cook until the tuna has reached desired doneness. Cook it a couple of minutes on each side.
To serve, place each serving of tuna on a bed of the beans and then lightly drizzle on top some of the balsamic dressing. Serve.
Cooking Tip: The mistake most people make is overcooking their seafood. If you buy good quality tuna there is no harm in a pink center, and you'll always have good results.
