Sweet and Sour Peppers (Agro-dolce)

Sweet and Sour Peperoni/Capsicums - AusItalia.com LifeStyle Peperoni all'Agrodolce This flavorful dish would be great served with grilled or roasted meats, an asset to any antipasti platter, and would also work well in a panini with sliced meats. Serve at room temperature or just warm for the best flavor. If you are concerned about the anchovies, try the anchovy paste in a tube which has a milder flavor.

This recipe is enough to serve 6 people.

6 Tbsp Olive Oil

4 Large Sweet Peppers, Cored, Seeds Removed And Cut Into 1 Inch Strips

1 Sweet Onion, Peeled And Thinly Sliced

2 Anchovy Fillets

2 Garlic Cloves, Peeled & Sliced Thinly

1 Tbsp capers

1 Tbsp Sugar

4 Tbsp Red Wine Vinegar

Salt and Ground Black Pepper

1/3 Cup Fresh Chopped Parsley

Heat the oil in a large frying pan over medium heat. Add the onions and cook until they are soft and translucent, about 5 minutes. Add the pepper strips and continue too cook stirring frequently until the peppers are soft. Do not overcook as you want the peppers softened but not mushy.

Add the garlic and continue to cookan additional minute or two. Add the remaining ingredients stirring well to combine. Serve either warm or at room temperature.
